Lukas B. Smith is a bartender, consultant, and educator with over twenty years of combined experience in restaurants and bars.
He graduated with a BA in Comparative Literature in 2001 from the University of Georgia at Athens. In 2002 he received a MA in Nationalism Studies from the Budapest campus of Central European University. He went back to UGA to earn a second MA in Comparative Literature, which he completed in 2006.
It was during his graduate years in Athens that his love for food and drink developed into a professional interest. Since moving to D.C., Lukas has worked in many of the city’s creative and independent eating establsishments. He won the DC Craft Bartender's Guild Rickey in 2014, along with the USBG DC Bloody Mary Competition. Smith was named Bartender of the Year for 2015 by Eater DC.
Currently, Lukas represents Mezcal Ilegal in DC. He is the herbalist and cocktail specialist for the Cotton & Reed rum distillery.
JD L. Quioco has been in the hospitality industry for over 25 years. He graduated with a BA in anthropology and a minor in chemistry from the College of William & Mary in 1995.
As the GM at Dupont Circle's Dragonfly Sushi in 1997, JD realized this would be his profession of choice. He went on to be General Manager at Mantis Restaurant In Adams Morgan. In 2005, JD was asked to open and run Bar Pilar, and two years later took over the reigns at Bar Pilar's popular sister restaurant Cafe Saint-Ex. With the success of both establishments, JD was promoted to the position of Director of Operations in 2009.
In 2014, JD became General Manager of Biergarten Haus, the largest German beer garden in the district. He then went on to run Spike Mendelson's speakeasy The Shepard.
